I really like those plants that grow from bulbs (aponogeton, I believe) that you can get from Petsmart or Walmart. Anyways, I've read that they die away seasonally and I've had that happen to me. I had three or four full grown aponogetons grown from the bulb but they melted pretty quickly at one point. How can I prevent this from happening next time?

Eventually they will go dormant, but you can sometimes stave it off long-term by not allowing the aponogeton to flower. They send up long flower stalks to the surface, often multiple stalks a week...just pinch these off before they open.

The plants will usually come back if they received enough nutrients from the substrate while they were growing. I have several apons that have gone dormant and then come back after a few weeks.
