I have pockets of water in my sand bed - at least I think it's water not air, is this bad?

try stirring up the sand or buy some Nassarious (sp?) snails that bury themselves into the sand thus shifting the sand for you.

the bubbles you are refering to are pockets of nitrogen gas..this is one of the ways your tank changes harmfull nitrate in to nitrogen gas which will then get released vis tank cleaners on the sand bed..

would you suggest getting anything inparticular to do this? I have 9 hermits, 3 turbo snails, 6 cerith snails and 3 astraea snails - how many more snails and crabs would you recommend if any?

As suggested above, Nass snails do bury themselves in the sand and are a good way of releasing the gas..buy your self 5 and start from there...
