In a 125 gallon I have the following fish:
*1 Wild Oscar (6-7 inches)
*1 Green Terror (5-6 inches)
*1 Convict (2-3 inches)
*1 Synodontis Eupterus (4-5 inches)
*1 Pleco, unknown species (5-6 inches)
I have lots of cover, and I have 1 Filstar XP3, 1 Fluval 304, and 1 Penquin 330 for filtration, is that enough?
Should these fish be fine with eachother you think?

Your tank size and filtration is good. The only thing I would be concerned with is the Green Terror, even in a 125 gallon tank he could definitely, and probably will cause some trouble. Just my 2 cents worth, but then again I tend to be overly cautious. Good luck with your tank.

how aggressive is the GT ?
if he is not very aggressive the you should be fine but he will probably be the ruler of the tank. he will swim circle around the oscar.

The GT is now causing big problems, I'm gonna trade him in tommorow. What other peceful type of fish could you recomend???

You could try a severum, firemouth, or rainbow cichlid.

That doesn't surprise me, they are aggressive fish for sure. I agree with dbcb, one of the fish he listed would be a much better choice for your tank IMO. Good luck.
If it is a 125 of the six foot variety you could also try another oscar. If you are trading in the GT.

if I traded in the GT could I add both the Firemouth & Severum?

Probably, but you'd want a CB Severum if your tank parameters are far divergent from those recommended for Sevs...of course, I just saw the Wild-type Oscar (is that a Wild-caught one?) and realized that the water params should be pretty close to those of WC Sevs anyway.

I've come up with another thought, instead of the firemouth or Sev, could a fire eel be ok. My lfs just got in a nice 8-9 inch one.

Not sure on that, as Oscars are known to take Knifefish in the wild...the same shape might encourage some risky behaviour on the part of the O.

Could a tiger datnoid work instead of the firemouth and severum

Maybe. They like harder, more alkaline water, and they are best kept solitarily in an 80 gallon.
