I keep reading that carbon is not really a good thing, Why is that?
Does it have something to do with Phosphates or something else?

Also, If you don't use it how are you keeping your water clear and crisp looking,
just with packing if so how many microns? 100?

Personaly, i dont run carbon, i never have and i have never had anything but crystal clear water. I would only run carbon if i ever have to add meds to the tank.

With regards to what it does, well, its easier if you read this article, it will explain all the pro's and con's, what it does, what it does not do...

Hope this info helps a little to achieve what your after..

I run carbon only on occassion, basically when something goes wrong... usually when one of our soft corals gets stressed and there's the potential for it (and the others in response) to release their chemical warfare toxins. Otherwise, a good skimmer that's tuned properly will remove a lot of the organics that can stain the water.

Our tank stays clear without carbon as well.
