One of my plant shipments included a small four leaf piece that I stuck in the gravel to see if it would grow. Without a doubt it has. It looks like the hygrophila polysperma shown on the Tropica site, and with its growth rate, I fugure that's what I have. However, in my 3wpg tank it is spreading horizontally and not vertically. I want it to grow UP, not out.

Lopping off a runner/stem has not done much - I must have five or six pieces now sending 'runners' above the gravel and leafing out every couple inches or so. Can I train it?

Sounds like a 'shroom....

Can you train my dog too? He always wants to eat, and that needs to be taken care of.

IME hygrophila polysperma grows more towards the surface in lower light situations, in higher light it tends to stay shorter, mIght want to try planting it close to some taller plants to shade it a little then it should reach for the surface. It is a hard plant to train due top its rapid growth rate.
