Deep sand bed question

I currently have a larger size of aragonite gravel. When I move, since I have to tear down the tank anyway, I want to switch to sugar grade sand.

My question is, how will my goby and shrimp fare in such fine sand? Will they be able to dig tunnels? And if they can, will they ruin the anaerobic properties of the sand by stirring it up, or will there still be enough unspoiled area?

The sugar grade will be fine. You will find that it doesn't compact when is salt water. The fish will love it, and it is obviously better anaerobically. Aim for a couple of inches at least in depth, and don't worry about the gobies disturbing it too much, it is quite dense and will generally stay in place with strong current, but not as well as coarser sand.
