...but do Platys mate with different type of Platys?
i.e. A Gold Twinbar with a Red-Wag Platy OR Black Molly with Silver Sailfin Molly
Or do they stick to their own distinct species?

Yes, they will mate without discretion amongst themselves....

they will spawn and spawn until you have a tank full.
If I have this right, Patys are all one species.
the different sorts you mention are "varieties".
and they will all mate with one another.
I am sure someone will correct me if I have the terminolgy wrong.

All Platies are very, very closely related and can mate. It's like a Mustang and an Arabian Horse...all the parts work as long as they wish to 'Tango' together ;)
Same is true of Mollies, Swordtails, etc.

Yep, just like all dogs can mate... though the chihuahua is wondering how to get to the great dane... nevermind.
Variety is probably correct enough. In dogs, it's breeds.
