I keep my Mysteries in with my discus and plants. My water parameters are 83F pH7.0 water is soft.. Is this alright? They don't seem to mind it. Every once in awhile I see one just sitting on it's back for awhile, but I figured it was just dropping from the top and hadn't flipped back over yet.

Snails need calcium, not PH to be healthy. You can always supplement them if there is a question. You can buy calcium for your tank and add it. Also, putting a piece of cuttlebone(the kind for birds) is good for them to graze. The easiest way to give them calcium is by feeding them calcium rich foods. Most green veggies are great for brigs(aka mysteries, apples).
I feed mine green beans, parsley, zucchini, cucumber, apple, potato, carrots, and snail jello...a mixture of calcium rich(higher than 2%) baby food veggie, flake food, algae tabs, unflavored gelitain, and some powdered calcium. Heat the babyfood in the microwave, add the other ingredients, mix it all together and spread out about 1/4 thick onto a plate, put it in the fridge and then cut into squares after hardened, and store in freezer. They go crazy on this stuff and it helps them have stronger shells. Hope this helps :)

Thanks! Greens won't mess with the hardness as much as a cuttlebone would, right?

No, they will eat all of that lol. Just take out what they haven't eaten after 12 hrs or so...as long as anybody isnt working on it ;)

I put an apple slice in the tank for my snails, and they never touched it. All that happened was it grew a bit of hair and I threw it away. No fruits, just veggies?
