I am going shopping tomorrow to find a tank for a niche in my home - will probably have to have one custom made :( I am thinking of setting up 7 bottles to make co2 - a new one for every day. What happens if I have to go out of town for a couple of days and the level of co2 drops because 3 bottles are not refreshed? Are plants that sensitive?

What will happen? A couple of days without CO2 won't hurt them, will probably just slow down their growth.

My plants don't seem to be sensitive too sensitive to a loss in CO2, particularly for a few days. Your growth will slow, and eventually it may start to die off if the plants can't support the growth with the amount of CO2 in your tank. I know my DIY is on empty when my plants stop growing and start to die off on the tips. Change the CO2, do some pruning and they seem to double in size over night again.

Which reminds me, I need to recharge my CO2.

How big is your tank?
A good DIY CO2 bottle can go for 3-4 weeks...

What size would you recommend me? I was thinking of using 2 L coke bottles...without the coke, of course ;) My tank will be under 20G
