Java Fern will attach to wood after it's been tied down for a while. Java Moss is the same. Both are very undemanding plants. For ground cover, Glosso is a favorite, but it's tedious to plant. If it doesn't get high light, it will grow up to get light rather than spread out.

a wall of corkscrew val would look nice without making the tank feel shallow (from front to back) because you can still sort of see through it

You have a lot of options with that wattage. Take a look through the catalog at Plant Geek. You might want to consider some sort of CO2 set-up.

You do have a lot of options with your wattage! Your biggest restriction will be plants that can take the higher temps that discus are kept at. Anubias and the shorter variety of java ferns, tied to the driftwood to root, always looks great and they both tolerate the discus temps. I don't have the wattage you have but all varieties of crypts grow great in very warm water. Mosses won't like the temps. Vals, swords, all hygros grow great in warm water too. I use small crypts as foreground plants. If you go with a ground cover, remember that discus like to graze for food and to keep some areas of your tank bottom open and plantfree for their grazing.
