ever had a tank where if a single sinking pellet stayed on the gravel overnight, it would have a 'halo' of fungus around it the next day? i dont see fungus on the fish so not sure if i should fungicide the tank or just let it go and be super careful about not overfeeding.

Fungus on food should not be too much of a concern, and there is no need to medicate the tank. Fungus spores are every where and sooner or later one will find its way in to the heavenly wet/warm environment of your aquarium.
Depending on the type of fish you have you can add a little salt to the water. This is good for the fish and will help deter fungal growth.
Removing uneaten food is also a good strategy - or to save you some work - adding a "clean up crew" like a few small ghost shrimp or scavenger snails will take care of any left overs in the tank.
