How much substate?

I have a 54 corner bow that I plan on lightly/ moderately planting. My LFS told me that 2 20lb bags of eco complete would be enough. How much is recommended for planted tanks?
 
in my tanks i have around 2" in the front 3" in the back.
 
I have been finding this question to be a tough one. Planning to have a lot of rocks in my tank and filling the substrate in around it, it's a little tough to say just how much will be needed compared to having just a full bed of substrate.

Better to have a bit leftover than too little to do the job.
