I would only do a pair, due to they can reach 5 inches, and a 40g breeder is too small for more than that.
But if you're looking to get a breeding pair of FireMouths, then I would do a total of 5 for the tank. Get 3 from one store and 2 from another, this will help your chances with getting a spawning pair and limits inbreeding.

No more than 2, and even with 2, you're likely to get aggression in that tank unless you get lucky.
If you find just males, for the color, you could do 4 or 5, but I agree that a pair is probably all you could have if you want to breed them.
