I'm going to assume you're asking about Mystery snails though (Pomacea bridgesii). They don't eat plants, and need to come out of the water to lay eggs. Mine lays their eggs on the underside of my tank's lip and canopy, and aren't much of a tank escapee risk.
most commonly available apple snail species are not healthy plant eaters. typically they only leave their environment if there is not space to lay eggs, or an ample food source

a mystery snail is just a common name for pomacea bridgesii. They can often do OK in an uncovered tank, however, they could just as easily meander out. They look for the best place to lay their eggs...with a cover, it limits their scope.
yes they need to leave the water to lay there eggs, so may go a wandering if no lid to find the best spot. also if there is a water quality issue they tend to rise to the waters suface as well.
