i've got this 5-6 gallon tank,it's unheated wondering what i could keep. i wanted snails and shrimps, any ideas what species?
temperature in winter could be 14°c

Why not just get a heater to fix that low temp? If you do get a heater, you can add any dwarf shrimp in there.
A good starter dwarf shrimp are cherries. They're very colorful too :-)
Or if you wanna jump ahead and get more expensive shrimp, crystal reds/black are beautiful choices. Other color variations of cherries are good too. Like yellow shrimp and snowballs.
Snails on the other hand will work too, along with shrimp as tankmates. Any snails will work. Brigs are nice for color and easy to control population.

most snails will live in colder water and live longer but much less active
i'll use a heater just realised i've got one in my house.
