I have a 55 that I want to plant but have no idea what kind of plants will work in the setup. The setup is pool filter sand with hard water and african peacocks. I have no special lighting and just need some advice.

Can you estimate how many watts per gallon of light you have? It might be easier to make suggestions with that :)

My lighting situation is two 30 watt 6500k bulbs, one in each hood. I would also like to know what kind of plants I can grow without them being eaten. I also need to mention that my aquarium sits in front of two windows that are the length of the tank and I open the curtains for several hours a day to promote algae growth for my bristlenose. Whats all the hype about co2 and how do I measure it to see if i have enough. I am going to put the plants in pots disguised as rocks with gravel on the bottom and peat moss on the top. Is this a good idea or do I need to use some other substrate?

You can put your plants directly in the sand; you may need to use a plant weight to keep them from drifting loose. You do not need supplemental CO2 in your setup. I'm not familiar with your fish, but Java fern is supposed to be unpalatable to most fish and will grow in your low light tank. Hornwort is loved by some fish, but grows very quickly, so you will likely have plenty to go around.
