I have a 55 gallon with a Blood Parrot, a Firemouth and a Wood Catfish. Am I just experiencing empty tank syndrome, or is the tank really empty? I was thinking of adding another Blood Parrot, would this be wise? Could I add anything else?

What size is the blood parrot currently? If you can increase frequency of water changes, it shouldn't be a problem although keeping two blood parrots is best done in a large tank even.:)

I believe you have adequate space for another. Keep a watch and see how they behave to each other's presence. Get another tank ready if they bicker violently as most cichlids have been known to do so.

You have plenty of space.
