Actually muds and musks aren't all that adept at catching fish. They're not great swimmers, more of a bottom-walker type. They have very strong jaws that are built for crushing snails and clams though.
 
Lets us know what species you're thinking about getting for sure. I have a pair of Stinkpot Musk Turtles (Sternotherus odoratus) and they are a great beginner turtle species to consider. They are much, much easier to take care of compared to a RES or other basking species. I've also kept and bred Eastern Mud Turtles (Kinosternon subrubrum) before.

I agree with Vicious- get your paludarium up and running before you jump into setting up a turtle tank. Kinosternids are fun little turtles, with lots of 'personality', and they're pretty easy to care for, but you still don't want to juggle too many projects at once.
