Fluval FX5 and Emperor 400 questions. New setup. 125 gallon

I currently have a 125 gallon with a FX5 using prefilter and biomax with the stock filter pads. I also have a emperor 400 with 2 biowheels and 2 filters (filter floss in the grey thingy's).

I have roughly 70 pounds of cured live rock and 120 lbs of dead aragonite reed sand. I also have about 2 lbs matured live sand acquired from a LFS's very mature coral display tank.

In addition to the filters i have a maxi-jet 1200 powerhead on the same side of the tank as the FX5 outtake.

After doing some research i have found out that the filter media i am using can become huge nitrate factories. What should i put inside the filters? With the FX5 I was thinking of ditching all the prefilter and biomax and putting in some phosban (or similar product) and maybe some possible live rock rubble in the trays. With the Emperor 400 i have no idea. Maybe take out all biowheels and filterpads and replace with live rock rubble also?

Please help. This is my first saltwater tank and i wanna make sure it gets setup properly.

Another idea for the emperor 400 would be to completely ditch it and throw in a nice powerhead. Main reason i have it is for circulation.
 
For the long run of your 125, the Emperor 400 will not do well at all. Can you look into possibly getting yourself a sump? And in that way, you only would require the best skimmer that you can buy. If you go with the filtration you mentioned here, you not do good. Also, try not to go with a canister filter as well, your best bet is a sump and skimmer. If you cannot drill your tank, you can still have a sump. You need to get a siphon overflow box to your tanks water volume.
