Dead RCS in molt again

This is the 2nd red cherry in two weeks that has died in molt. He didnt seem to have had any fish eat on him. Just dead and soft.

the reading;
nitrates-20ppm
nitrites-0
hardness- mod-hard,
Alkalinity-160
Ph- 7.0
ammonia- .5ppm

I did a water change on Saturday, not sure why the nitrates are this high already.

Tankmates- 4 hillstream loaches, 7 Kuhli loaches, 5 corys, 2 bamboo shrimp
 
The ammonia is probably the problem. Shrimp will be especially susceptible to anything while molting.
 
The nitrates are perfectly acceptable, the ammonia is a tad high.
 
Shrimp are very sensitive to ANY ammonia, its likely this is causing the problem for them. Is your ammonia always showing? How long has the tank been set up? Are you using a liquid test kit?
 
I am using a dip stick, The tank has been set up for eight months, two months ago I redid the substrate. I thought everything was fine, should I just do another water change? My poor lil guy, makes me so sad when this happens.
