So my floor, under my tank in think is settling, and my new 55g tank is just a little unlevel now, should I worry or should I try to shim the tank? What are my options?

you definately want the tank to be as level as possible.
if it sits on an uneven floor, and could possibly wobble as a table or a chair would, it could crack. especially if is it eneven on diagonal corners...

The tank does not move at all, it is unleveled across the front and back of the tank. we are talking the tank would have to up on one end about the depth of the coin of just a little more.

Yes they will work fine and then you can score and snap off the part that sticks out.
Am I going to have to empty the tank all the way to get or can I just take some of the water out of the tank.
