I was wondering what is the smallest size tank one could use for saltwater?
And what could they put in it?

I'd say a 10 gallon if you want any living critters. Maybe hermit crabs or snails would work in a smaller tank, but I'll let someone else answer that.

The largest size tank I'd have room for is a 30 gallon

A single clownfish, 10 gals is fine. If you went for a 30, you do have a few options on small fish, some inverts and small corals..

get the largest you can fit in the room. and 30g would be fine for a pair of clownfish

Pairs of clowns can do well in many sitatuations, so long as a few criteria are met:
High water quality
Attention to maintanance
And if they're pretty much the only pair in the tank.
To give you an idea, i keep a happy, happy pair of true perc's in my 12 gallon nano.
It seems to me that you're new to SW, so i would recomend a 12 or 24 gallon biocube. They incorporate alot of things, don't need skimming, great shape. As close to 'plug and go' as you can get in SW.

I think a pair of clownfish is what I'll go for. It might be a month or two before I get the tank.
It will most likely be a 30 gallon hex. Will this work for the clownfish?

Oh, easy...Hex's actually give a liot of interesting manuever rom for Marien tanks.
Can't wait to see how you aquascape it.
