I have two 30" Coralife Aqualight deluxes over my 24" deep tank. I am currently using three 6700k lights and one colormax bulb. The aquarium seems dimmer but I know this due to the change in light spectrum. However is it more beneficial to the over all health of the tank to run to 6700k and two colormax or should I stick with the current 3 to 1 set up?

all up to you. If you would like a dimmer tank then can stick with the current setup. Plants will grow either way.
Like Bk said, it just depends on how the tank looks visually to you. I run a 10,000k bulb, and the 6700k-Colormax bulb. Nice mix.

If it were my tank I would put one 7100K bulb on the inside (ie. the middle of the tank side) of one fixture, one 6700K bulb on the inside of the second fixture and 10000K bulbs on the outside of both fixtures.
