So, with the rate that Mollies breed, am I going to be swarmed with them or will I be able to put them in my goldfish tank as, um, lively appetizers?

Depends on several factors. I have lyretails in my 55 coolwater tank, and have not seen a batch in 2 months. In a warmer tank, reproduction will occur more frequently, but with hiding places the fry are often eaten by other fish.
I wouldn't feed them to goldfish though--goldies are primarily herbivores.
