If you want to make snail jello for him there is a stickied thread in the invert forum section. You could try algae waffers, or any fresh veggies like lettuce, broccli, spinich, peas, collarflower. Just blanch your veggies and they should sink and your snail should love them.
O and congrats on joining the invert world.

blanching just means dipping the veggies in boiling water.

I just got a Golden Inca from the lfs the other day (my first snail too) and I wasn't prepared for how much gravel he moves around. I keep expecting to wake up to find all my fake plants moved around. :)
I've seen him eat a sinking goldfish pellet, sampled a small piece of a baby carrot and lettuce, along with racing around the tank cleaning up.

I wouldn't use onion. I would try some green veggies (green beans are a bit hit at m y house, as well as zucchini, cucumber, etc). Blanch them if fresh, if frozen just defrost and sink them.

I have about 100 of these snails in my tanks. My largest are in my discus tank. They clean up after all the frozen beef heart and other frozen discus foods that I feed including pellets. At one year they are the size of a silver dollar, absolutely huge! These guys eat anything that is uneaten. Have fun!
