So My new canister filter is up and running. I seeded it with a bunch of really nasty filter media from my HOB. How long until I can remove the HOB and just run the canister?

Run it for a week minimum and call it good.

I really want to go just to the canister filter since it's quieter than the HOB plus I'm having a bit of interference with the spray bar. I ended up getting the cascade and it works nice, very powerful. My fish LOVE the new current

Since the new filter is more powerful the bacteria in it will grow very fast. You might even be able to get away with only waiting 3-4 days.

Personally if the noise bothered me that much I'd yank the old one right now and just do water changes if the NH3 and NO2 get out of spec.
