Looking for some inverts that wont eat the plants. Shrimp, snails, crawfish, ect...

ghost shrimp, cherry/yellow/snowball and what ever other kind of shrimp there is, dwarf crayfish, apple snails/mystery snails, nerites and ramshorn

Ok, thanks! I thought apple snails ate plants?

Some apple snails do: haustrums, canas, & marisas for example. Bridgesii are plant-safe.

Damodred is right. Only the Pomacea diffusa don't eat plants. Other options would be assassin snails and nerite snails.
