what sevrum do you like better the green sev or the orange shoulder sev

Severum are all great looking, but I like the Rokteil the best.

I really like the rotkeils, I'd love to get a pair eventually. I have a pair of golds right now, which are really nice, but I've seen some great green ones as well.

I have a pair of greens and they are very nice. I do really like the rotkeils too.

The ones advertised as 'super reds' or reds are my favorites.

I like all sevs, but it probably would be between a rotkeil or a red-spotted gold sev for me. I love the look of heros notatus as well, but they are really difficult to find.
First pic is a red-spotted, then rotkeil, then notatus. Not my fish (wish they were lol).

IMO, yes if multiples are kept. Of course it depends on the other stock, filtration, scaping, experience, etc as well though.
Sev has a gorgeous Rotkeil pair in a 55 now and they do seem a bit crowded. They're soon to be rehomed to a planted 120 along with some other fish from our current tanks.
