Can I put a shallow dish of some sort filled with sand on the botton of my tank when I have an undergravel filter? I just thought if it were in a dish it wouldn't be a problem and yet it would give the fish a little variety in the aqua-scape.

Yes, and no. Yes, because it will prevent most of the sand from being sucked into the gravel. No, because the large dish will block the flow of water through the gravel in that area, reducing the effectiveness of the UGF. This dead patch may cause some problems, and will make maintaining the UGF a pain. Water currents and fish will end up moving sand out, as well, meaning you have to refill it and deal with the sand elsewhere.
Sorry--but I wouldn't try it.

Why not shut down the UGF, buy a nice HOB and then place the sand into the tank.

You could just convert to sand and get an internal/external canister filter. Maybe?
