I was wandering down 8th avenue around 55th street in Brooklyn, in the chinatown area, and a seafood vendor was selling LIVE mudskippers, that wer really nice and large, with very disinct blue spots all over them. These were large mudskippers, probably 6-7" long with heads as round as a hotdog.

These guys really needed saving. I know how many mudskipper fans there are around here, so I thought I'd let you know. They were right on the street, impossible to miss.

Its a seafood vendor. Yes. They're sold to be eaten. You can also find dojo loaches in food markets in many areas.

Wonder if anyone would be kind enough to buy and ship for the ones who feel the need to rescue some?

I would take one or two, if someone will buy one and ship it to me (at my cost, of course.)

well, If I thought they'd survive purchase and shipping without some quarantine time to rejuvinate, I'd be happy to. But in reality, these would really need to be acclimated to a tank before shipping I think... and I don't have the space for a tank for them. they were big, and probably brackish.

they were in 1/2" of water.

They are for fish pastes and fish sauces. It's a major component in many SE asian foods. The most common species used are benthic feeders in which they scrape mud and filter out diatoms and other little microscopic critters...
I've eaten them before in Thai, Viet and Mong dishes.. but it's a flavoring component so you don't see what you're eating. You'll also see them in asian markets in bottles labeled "Mud Fish".
