I am planning on getting a betta, and am currently cycling a three gallon tank. Would it be wise to put any cories in there or would that be overstocking?

While Bettas and cories do work well together a 3 gallon tank isn't going to be enough room for any extra fish.
Cories get to be 2 inches on average and need to be kept in groups. Ideally they need a minimum of a 10 gallon tank to be kept happy.
If you are wishing for some diversity in the tank other choices would be an apple snail, some fresh water shrimp like ghost/glass or ammano, or else possibly a dwarf frog (not a clawed frog as these will eat the betta).

ITA. Corydoras need 10 gallons +.
I wouldn't keep them with the betta in such a small living space. The cories do like schools of 5 or more so a smaller tank probably isn't good for them.
