I fairly new to aquairum plants. I have several amazon swords, melon swords, anacharis, pygmy crypts(maybe?), and some large broad leafed plant that I'm not really sure is totally aquatic.

I remember somewhere hearing about aquaitic plants needing a dormancy period of cooler temps and/or dryer conditons. I would assume this applies mostly to bog dwelling species.

Do true aquatic plants need a dormancy period? Should I worry about it with any of my plants? If so how do I go about it?

Some plants take a few days/weeks to restart growth after a move or going from emersed to submersed. I've found with hair grass that it is better to trim it short about 48 hours after replanting. It jumpstarts the regrowing process. Not sure if that works for all of them, so don't quote me :) If the plant is not 100% aquatic, you might have some issues growing it under water.

Your amazon swords will go into to a dormancy period if a corn develops under the roots. If, all of a sudden you start to lose growth on them, just uproot and check. If corn, cut it off as close as you can to the base of the plant and re-plant. It will re-grow. Make sure you do not damage the roots or cut to close to the base as the plant will fall apart. Than ya gotta start all over again with new plant.
