If my plants are not pearling are they still releasing oxygen into the water column? I have good growth, plants are the correct color for their species. They just don't pearl.

Yes. If they are photosynthesizing, they are producing O2. You will see pearling if the water is already saturated with O2 or if the plants are photosynthesizing at a very rapid rate. (strong lighting/good CO2)
