How low for nitrates?

How low do I need to keep nitrates to keep my amano shrimp happy? They are at 5ppm in a heavily planted tank. The excel is working great. I do bi weekly water changes of 50 %, sometimes weekly changes of 30%.I do the changes regardless of the test readings. The shrimp are regularly molting.

WOW! I don't even begin to get extraordinary plant growth below 20ppm! Shrimp must be dainty creatures!

At greater than 20ppm I see elodea start 1+ inches a day, green shoots on the java moss, chit loads of babies on the java fern, etc. I think I can do without the shrimp. In the past, they survive poorly in my tanks, you probably know the reasons!
