I'm in the process of setting up a 20g. My question is, is there a certain number of crabs and snails you can have depending on tank size?

Not really. Lots of places sell packages for specific tank sizes, but IMO, some of them are a little large, especially for an unestablished tank. I would recommend starting out with 4 snails per gallon, and one crab and one shrimp, or two of either. This allows you to make sure your tank will support them without spending $$ on many of them, and you can slowly build up the populations to sustainable sizes. JMO, though!
