will these snails go after amano shrimp when other food sources dry up?

I wouldn't even expect them to wait until the snails are gone. I wouldn't keep them together.

They can but it happens very very rarely. I keep my assassins with bee shrimp and they only eat the ones which have passed on their own.

I have assassins in all my shrimp tanks and have for over a year and never seen one eat a shrimp that was alive. It can happen but it is very rare and if the shrimp was stupid enough to get caught by an assassin it needed to be removed from the gene pool anyway.
