Salt is pretty stressful for plants. In a brackish estuary you see salt meadows of just a very few kinds of plants (many of each kind of course).
Whether you mean one of the true bamboos or a Dracaena, I think the real answer is "not over the long run."

looks like it's gonna be mangroves and java fern for my tanks :)
