So I've been wonder for a while, if you can just crop off a part of a plant and replant it and have it eventually grow roots.
Example, lets say I were to cut this plant at its stem where the red line is.

Would I be able to then plant the cropped portion and have it grow?
Any useful input is greatly appreciated.

Yeah, when people trim them, they replant them. They will grow roots. Also, in the plant that you cut off, new plants should start shooting out. That's how stem plants reproduce.

With some plants this will work, with some it will not. Usually it will with stem plants and things of that nature. It looks like you should be able to do just that with the plant in your pic. Just remember to try to pinch it off just above the node where the leaves form. A lot of people also suggest trimming off any leaves that would be attached below the substrate when you replant.

I don't recognize the plant, but it should work fine. I might cut a longer piece, and do remove the lower leaves from whatever portion gets stuck in the substrate.

That looks like a hygro of some sort...you should be able to trim and replant.
