i am very picky about cakes. i'm open to try anything but rarely ever progress beyond a few bites if any at all. typically, if i like it you can feed it to anyone in the room even if they don't like that kind of cake.
if i were to pick one cake for the rest of my life it would be a very exceptional carrot cake.
icing is very important to me in the final outcome. after all every cake pretty much has it.
i am very partial to a good, simple cream cheese icing. nothing too fluffy or too sweet 2 drops of vanilla extract is enough to kill a whole cake usually imo.
that being said i am open to trying new icings too provided they aren't too sweet or heavy. the thought of digesting just sugar and lard or butter disgusts me so most icings are out of the question.
i can do a pound cake from time to time but i wouldn't exactly call that a cake either... more like a pound of lard with dough. (don't ask me why this doesn't make me sick cause i don't know. lol)
not that you can't tell but i ran an upscale catering kitchen for some time a ways back. so when i say i'm particular about cakes it means i've tried a single bite from thousands of cakes and i'd go back to about a dozen MAYBE.
good call, msj... ice cream cake is always a hit! kids love it. ice cream with icing, who knew? :evil_lol:
pssst: sam's club has decent cakes that go over well for events too. they're good if you know you won't have time to make one and you're on a budget. (who isn't these days)

Any kind that's gluten free! :) I'm allergic to gluten so I barely ever get cake unless I make it myself.

I love all cake. As long as there's not a lot of nuts or coconut, usually. There are always exceptions. I especially like cake with chocolate that's spongy and runny from alcohol :grinyes:

Banana Pecan Cake
Cream together;
1 Stick unsalted butter
1 cup sugar.
Add;
2 eggs
3/4 - 1 cup mashed bananas
1/2 tsp vanilla
1 cup flour
1/4 tsp salt
1/2 tsp baking soda
1/2 ground cinnamon
1/4 ground ginger
1/2 cup pecan bits
Bake at 350 until top is brown and cake springs back when touched. Or use a toothpick. Time depends on size of pan( I usually use a 9x13 or larger), size of eggs and amount of bananananana. I usually sprinkle some of the pecan bits on top instead of mixing them all in. You can also dust the top with powdered sugar before serving.
