I blanch zucchini for my RCS, and they eat it up.

Blanching (http://www.uga.edu/nchfp/how/freeze/blanching.html)means to boil or steam a vegetable for a very short time until it is just heated through and slightly softened, then to dunk it immediately into ice water to stop the cooking.
Since you probably don't need a whole vegetable for one feeding, try this: Get a zucchini or other small squash. Slice it as thin as you can manage. Have a pot of water boiling on the stove, and have ready a bowl of water with ice cubes in it.
Put a handful of the zucchini into the boiling water, wait 1 minute and scoop it out with a slotted spoon into the ice water. Follow with another handful and repeat until done.
As soon as the vegetables in the ice water have chilled out spread them on a sheet of wax paper and stick in the freezer. As soon as they are frozen take them out, dump them in a ziplock bag and put them back in the freezer. This is to keep them from sticking together.
Take out one slice and let it thaw and put it in the shrimp tank. Check back in an hour or so and if any of it is left, take it out and throw it away.
Best to do this just a time or two a week, not every day unless you have a big tank and a zillion shrimp. Overfeeding is a frequent cause of shrimp sickness and death.

you could leave it in longer - at least in the beginning so your shrimp have time to realize it's something yummy to eat.
