I have an Eheim Ecco 2235 on my 75-gallon tank and every time I sit next to the tank I can always hear a loud humming noise. It gets very annoying especially when I am trying to read. I have an aquaclear 500 on another tank and it is extremely quiet in comparison. Is this normally how loud Eheims are?

No, all my Eheims are totally silent. I can only tell if they are running by placing my hand on them.
Noise usually means air in the impeller well or maybe some dirt or a bit of something hard. Sometimes turning the canister upside down a couple of times while running will dislodge a bubble. A good cleaning might help, too.
This winter I had an Eheim get quite loud and it turned out that the impeller had broken. Don't know how it broke, but a new solved the problem. Something else to check...
