"Chinese Goldfish", Tetra Press ISBN # 7-119-00408-5.
This book details the development of Goldfish from the Northern Song Dynasty (960-1127) when a gold fish was discovered in Hangzhou and Jiaxing, Zhejiang Province to the present day.
That and Google ought to get you started.

slightly OT, but at the LFS I saw the most bizarre goldfish. This one was labelled "celestial eye." They all were a very pale irridescent gold color. They had the enormous eye balls with huge pupils that were fixed pereptually upward inside eye sockets protruding one from each side of the head.
I must admit to having been slightly sickened by their appearance.
ETA: I googled and discovered that these are a form that are at least 100 years old. They are still bizarre looking nonetheless. picture here of celestial eye (http://www.fish-express.com/ldocs/lt-cel.html)

I don't keep any of the bubble or "dragon eye" varieties- don't care for them even a little.
A huge wen even near the eye is bad enough for me.

i would stay away from the bubble eyed golfish as well as the celestial eyed goldfish, i have enough stress wondering if my wilbur (black moor) is going to puncture one of his eyes, and those two just seem that much more fragile.
they are interesting though, i will admit.
I'll admit that I like telescope moors, however I personally prefer commons and shubunkins. I at least prefer the carp-like shape as opposed to the cultivated ones. Mind you I am starting to like Koi more than goldfish, mostly due to their size and incredible lifespans.
