If they are bagged, put them in a cooler. This will help prevent the temp from changing drastically. If you can, avoid making any long stops, where the temp in the car will spike.

I prefer using the ammo-lock chips to adding lot of the liquid--the chips don't cause problems for the fish, where the liquid sometimes can in a small volume of water.
 
I usually bag fish, and then stop and open up the bag every 2 hours to refresh the air if the trip will be more than a few hours. Or, you can put the fish and water directly into a large clean cooler, no bagging needed.
 
I had good success with plastic contianers half filled with water and added some stem plants. Of course the goldfish would probably eat the plants.
