Ok, well i just spent the last couple weeks gettting my ammonia down and under control all of my fish are still alive and seem to be doing well. Its finnally a the zero marker. I am aware that i should be watching for nitrate spikes? Can someone tell me more about this and what can be done to keep my fish healthy during this process.

As regards to what happens after the ammonia spike, just wait for the nitrite....Thats it.... :-)
The Nitrite spikes will probrably be larger than the ammonia spikes, So all you can do is keep up with those water changes daily to keep the levels low...
Now the ammonia has dropped in your tank It may be a good time to persuade an LFS to give you a handfull of gravel from a well established tank, From what I have read thius apparently helps Keep the nitrite spikes in control, But don't hold me to it LOL
Oh yeah, keep up with the testing of the water (You probrably know that anyway ;-)
