I was wondering if adding plants to an established tank would effect the levels of the tank? Should I introduce plants the same as I would fish?

Adding plants usually only helps a tank. Plants use ammonia and to a lesser extent nitrogen (nitrites and nitrates) as nutrients, so plants will usually improve your water quality. You can add as many as you wish at a time. Just research and make sure you can support the plants you buy, otherwise if they die, then yes, they will pollute your tank.
