The cory won't bother them. Lighting is usually the biggest issue when starting out with plants. You can learn a lot by checking out the sticky threads in the Aquatic Plants forum. It delves into many different aspects of plant keeping. Also, I really recommend this article over on Plant Geek. Good luck!

Cories seldom damage plants. The bigger question is if the tank will support plants, and the type and output of the lighting is relevant. The particular plants you're interested in adding may need more light than the tank currently has, so plant selection is crucial as well. Most tanks with regular fluorescent lighting will support slow growing plants like anubias, java ferns, and some crypts easily, though, so if you can find them locally, I'd give it a try. Plants are great for fish!
