It's brown, and has kind of a funky salty smell.
Later it occured to me what it smells like...dark soy sauce. Not the regular that most people use, but the dark. Kinda looks like it too....hmmmm.

Watch it if you are leaving in mom's pantry. For some reason, becasue I use the cap to measure mine it runs down the side and makes a mess. The rest of the Flourish products I use don't do this. Be sure you wipe it off when you're done or set it in something.
Quartermain...LOL..boy if it was I could save some $$. If I go to the oriental grocery store the stuff is dirt cheap!

flourish doesn't become unusable, but in rare cases has developed a mold like growth for some reason which can be prevented by refrigeration. most of the time refrigeration is not needed.
