Can those outdoor pond kits be used as an indoor pond?

you mean the liners? you can build a frame out of plywood and 2x4s for them. some of the preformed ones can be freestandings but most will need support.

Sure if you can support the liner with rocks, plywood or bricks or something.

I have seen those plastic kits used for inside. The LFS I go to has a 150 setup with a waterfall on it. He built a wooden frame for it and placed it in the store and uses a Metal Halide light for it as well. He keeps 3-4 painted turtles in there along with his koi that he sells.

Seeing as they are not covered, what do you think the odds would be of finding the fish outside the pond?

I keep Whiskey Barrel containers outside and rarely have fish jump out. I would not worry about it to much. If they have the room to move around and not feel threatened, they will not jump.

Fish will only jump out of the pond when they are scared. If they are inside you shouldnt have anything to worry about unless a loud and sudden noise causes them to jump.
New fish that have just been added to the pond often have a tendency to jump. Use a net to keep your pond covered while your fish are still new to their environment. Use it during the first 2 weeks of acclimation to be safe.
