The only plants I have right now is a group of anacharis that I got from the LFS. They came in a bounch but I planted each stem by itself through the tank. On a couple of them, where they branch, it looks like roots are growing. Is it okay to break off that branch and plant the roots in the substrate?

Also, all of the original bunches didn't have any roots and I planted them in the substrate anyways, is this okay?

That plant will continue to develop what I call 'air roots' all along the stem, especially if they are 'happy' and growing well.
You can cut them anywhere and replant whether there are roots present or not. Or you can let them float. Anacharis is generally adaptable to either way.
