Malaysian Trumpet Snails commonly called MTS snail are just what you are looking for. They will only eat dead plant material and won't bother a fish even if they had too.

You can find them in almost every pet store fish tank and if your real nice to the people there you can get them free. If you are there just before they close you can usually find them heading up to the surface for some fresh air.

Common ram's horn snails, pond snails and MTS won't eat plants unless they are already dying and decaying. If that is the case you should remove the dead leaves anyway.

Also you might want to think about upgrading to a 10 gallon tank. Those mollies and swordtails can get a bit big for a 5 gallon tank.
